At the age of 13 my grandmother, Antonia, introduced me to the fascinating
way of Old World cooking. I grew up in her kitchen in the Historic
North End of Boston where she taught me that everything brought to
the table had to be made with love and passion using only the freshest
ingredients. She instilled in me that there were no short cuts to
good cuisine. I love seafood, veal, and light sauces—Northern Italy cooking
is so unique. In our house with my grandmother and younger brother,
Rafael, cooking was always a family affair. All we put on our table
was good homemade food, red wine and water. It was always a feast. Later, in Boston, I worked with various celebrity chefs further developing
my culinary techniques. Over the last 6 years I opened five restaurants
in Boston, Amesbury, Somerville, Wakefield and East Boston. All are
doing very well and being run by chefs I trained. Things were going well in Boston, but my family’s destiny,
inspired by my 10 year old son Andres, was to become a part of Katy.
So, with the anticipation of attending a great school system and knowing
that his dad would bring a different approach to Italian cooking in
Texas Andres led us to our new home. I thank the people of Katy for their support and for welcoming my
passion for cooking. I hope to see you all soon. Sincerely, Chef Roberto Rossa
